
Two Acorn Squash hiding in the flower bed. This is a volunteer that came up right by my front door and since nothing else would grow there, I left it. It's become a beautiful big plant that greets me cheerfully with huge leaves and golden blossoms. I used to think I didn't like squash, but, Noelle told me how to cook it once. She said to bake it with brown sugar and butter. I tried it and now I love it. It tastes like veggie candy. It works best if you cut it in half and lay it on a cookie sheet and put the butter on it first and then the brown sugar. You'd think it would be the other way around, but, nope. Then bake it at 350 for about an hour. Man, it's good. I like the seeds roasted too, they make a nice snack.

I like to stick my face in the squash plants, you just see the most amazing little world in there. The light plays through the big leaves and strong vines and it's beautiful in there and there are critters in there too. It's where the toads live. It's kind of like being under water.

mmm acorn squash is delicious. you can also do it in the microwave, if it's too hot out for the oven. I cut it in half and put it cut side down in a dish with about 2 inches of water, with a little butter underneath it. Then nuke till it's soft from the outside. I probably add more brown sugar than what's necessary, but oh well. SO good!
OMG! I loooooove acorn squash. I'm the only one in my house that does and I buy it sometimes and eat the whole damn thing myself! Ha... take that.
That is yummy. I grew those for a friend a few yaers ago and tried it myself. It is delish. I got tired of it after a while tho. Those things take over a garden. With all the ground growers you have & vines, you are gonna have a ton of compost in the fall! LOTS of garden junk!
I cooked yellow squash for the first time last night, and now I think I want it every night! lol. I cut a few up in about one inch circles and laid them in a pan, dotted each one with butter and kept making layers until they were all gone. Then I poured 1/2 cup of water over them, put a "generous amount" of grated parmesan cheese over them and topped it off with bread crumbs....mmmm mmmm....yummy! 375 for 45 minutes. Oh yeah, cover it with aluminum foil while it's baking. I took it off for the last 5 minutes or so.

I am a squash hater. I know how to cook it (my mom used to cook it like that with the brown sugar Pat..add a dash of cinnamon to it.makes a big difference), but I just do not like it.
If you are growing butternut squash, I have a really good recipe for soup you can try. Not hard.
