Ruh roh!

Didn't I just check these things?? Yeah, I must have missed that big one, but, the rest of them developed in two days. And I know it's just the beginning. I'd better get to cooking. I have a feeling I'm being mocked by vegetables. "Har, har, you like gardening? You think you're a big shot gardener? Deal with this, bitch!"

Zucchini can be a cruel master. How did I let Casey leave today without these in her car? I'm slippin'.

Oh I'm jealous! I love zucchini but our plant died. Now I'm afraid it's probably too late to plant a new one. :(

I think you can freeze them and then use them in cooking - check out the Bernardin website, they should have some canning/freezing info there.

if you freeze it, when it thaws it will be really really mushy and only really usable for zucchini bread...and it'll look gross too...

best bet is to make a BUNCH of zucchini bread and freeze THAT...you can also can some zucchini, do you have any relatives who know how to can? there should be an easy pickling recipe for zucchini...

i have a lot of old cookbooks---that are dispersed all over the house....so i can't promise anything SOON, but i will collect zucchini recipes for you....you'll have plenty for the next crop!!

If you grate it and freeze it, I have found that it holds up pretty well, particularly for soups/stews/casseroles/chilies. Even better if you can vacuum seal it before freezing.

ahhahaha! That whole post was hilarious. For real, I was just thinking this week that you were probably going to make a funny comment about how your gartden is so abundently abundent and you did! too funny. I wish I lived near by too because I would ask you if I could come over daily with my grocery bags and fill up and I would eat all that delciousness from the zucchini to the corn to the watermelons to the cantelopes and radishes oh and the onions and peppers. Every day. I would. I promise. Something about picking vegetables and fruits right out of your garden...you are lucky and now I am hungry!

Grate it, squeeze out excess water, spread on cookie sheet that has waxed or parchment paper on it, and put in freezer until frozen. Then you can put the frozen grated zucchini in ziploc bags.
You can make zucchini bread or muffins and freeze that.

Chelsea brought home two huge zuchs today from the community garden. I am going to make zucchini bread after I clean the oven today..ugh!
You can also cut it into cubes, parboil it, spread it out on cookie sheet/freezer like above and put in freezer bags.

Today I am going to clean the oven and make zucchini bread with the three huge zuchs Chelsea brought home yesterday.
I warned her not to keep bringing them home. A few more here or there is nice but do not over do it.

Last year at the farmer`s market I bought a very very large butternut squash. IT WAS HUGE!
It took me an hour to peel and cut. Then I cooked them up and froze them. We like butternut squash soup in the winter.

yes, pass them on to everyone. Then keep telling yourself they actually eat all of it. Its almost impossible to. At least you shared. I would love some. Looks wonderful.
