

And that's not all of it either. I got 2 quarts of nice cherry tomato's and a basket of green bell peppers and a sack full of onions. All outta my little garden! And I still have nice lettuce too. There some garlic I dug up because it got mowed off accidentally, so, the cloves are little, but, I'll use them. Gowd, the Zuchs. Oh, man. And I didn't even pick the small ones. They're kind of panicking me now..lol. I ate one last night and one today..but, uhhh. Yeah.

I got a lot done around here despite the trolls. I finished up the mowing today and weeded the melons. I got everything watered, it's awful hot here. The garden still looks good, but, I know it won't for long. I can see some of the plants turning yellowish and fainting like and I know they will soon start to heave out vegetables by the bushel load as they get ready to die out. I HAVE decided to put a "free" stand out by the curb in August. I reckon that's the best way to handle all this bounty. Hate to see it go to waste and I sure wish all of you lived closer to me.

I wonder....I wonder if I could slice and bread the zuchs and freeze them that way?? Anyone know?
I'm sure it's possible - you can buy frozen breaded zuchs.
DD, do you know how to can? That would be a great way to take care of your bounty of booty.
Tempura the zuchs-Then get a big bottle of ranch dressing. Yummers!
If you do that they won't last long, lol. Do you have a wok?
DD I'm still so very jealous. We went to a farmers market on Sunday and paid for everything you have there, cheaper than the grocery store but not as cheap as free! I have aspirations of having a great garden one day...it will happen.
I bet you could bread and freeze the zuchs. You could also probably also slice em up and freeze up then take them out for your A1 concoction. Or make a couple loafs of zuch bread and freeze that. Make it all last as long as possible!
Pat, I have made eggplant parm and frozen it and it was fine so I'd think fried zuc's would be good too. Also you can pickle some and make salsa from some in the blender. Then some bread and muffins.
I'm pretty sure you can just slice them and blanch them and freeze without breading too because I buy the mixed frozen, combo veggies for stir-fry and zucs are in it.
Put a can marked donations by the freebie veggies you put out and you might be surprised how many folks want to contribute. Folks do that up here with firewood and pumpkins in the fall. They're called honor-system stands and you'd be surprised how much money is left in the cans and no one touches it except to add to it for their goods.
cut them into uniform pieces and then par boil, cool, freeze. some fruits and veggies get mushy if froze raw...just my two cents.
i usually just wait until its dark out and do zuch drive bys (leave them in sacks on people's doorstep).

The only thing about canning is, I have NO counter space at all. Big kitchen, but, no cabinets and no counter.

Pat, do you have a food pantry near you? I bet some people who are down and out in this awful economy would be very happy to be able to have fresh veggies. just a thought.
We do have a communtiy center pantry. I can ask them if they want some. Good idea.
You could stew and freeze tomatoes. My MIL did all the time. After she passed away, we still enjoyed her home cooking with all the food she had processed and froze.(Tomatoes, berries, applesauce, mac and cheese-she made the best mac and cheese, etc.)
Zucchini bread is easy and freezes very well. I also freeze fresh zuc's and process into breads near Christmas time and give loaves as gifts. Yum...

Yup, I just learned last year that you can freeze tomatos whole. No blanching, nothing. Easy and works good. I only have a small fridge freezer though. It's about full already. And so is moms.
I never knew you could freeze whole tomatoes! What is the consistency once they thaw out? I mean do they retain the texture that they had before freezing? I am so jealous of your garden, I am surprised my brown thumb doesn't kill yours just by looking at it. I was not meant to grow green things! LOL

Perhaps you can offer them ip to the food bank
in your area ( if you have a food bank) most
donations of food that they receive are canned
items or mac & cheese mix et al but to have
fresh veggies to add to the table would be
wonderful and balance out the meal as well
as providing added health benefits through the
nutrients of such red tomatoes & green zuks.

I am so jealous of your garden. We have a fig tree, and grapes that I was able to make fig jam this year and waiting for the grapes to ripen to make jam. We bought all our seeds but thank goodness we didn't plant them Texas drought has made it impossible to grow anything. So next year I hope to have a garden like yours.

I think they get soggy if you freeze them, but you can cut them into small strips and freeze them and then throw some in soups, stews and chili's. It's a good way to hide veggies in foods.
I take equal amounts of squash, zucchini, mushrooms and onions and stir fry them and wrap it in a tortilla with mozzarella cheese...yum! You can add chicken or beef strips, too if you like. I don't know if you have John Boy & Billy grillin sauce where you live, but that concoction is delicious dipped in their hot & spicy variety.

Nissa-frozen tomatoes are only good for cooking after thawing.
Pat-you would probably have a blast teaching yourself how to can but I gotta tell ya it's labour intensive and expensive to get started. Zuchs are not a candidate for waterbath canning which means you've got to get a pressure canner. Don't know how muchh those suckers cost nowdays but the one I bought in 1975 was $60. And the price of jars and lids all add up quick. And then the cost of all the energy. This city girl went thru a back to the earth mode in the '70's and taught myself how to garden and can and I still have a big ole box full of county fair ribbons for all my efforts. Oh, but I can so see you canning and putting pics up. Those full jars always reminded me of jewels.
Mmmm! Tempura veggies are sooo good. Then you get a nice creamy garlic dipping sauce for them.
Oy! Now I am hungry. We do mushrooms, and sticks of zuchs, yellow squash, and eggplant.
Dipping them in warm pasta sauce is good too.
Next year you have to give me like a million tips on how to make my garden better. I have to post up new photos...You'll see it looks like I stomped on it or something.

Not sure if this was mentioned, but if you do decide to bread the zuchs for freezing, prepare them the way you usually do but freeze them in a single layer on a cookie sheet. Then bag them. They won't stick together then. Probably you knew that already, but just in case.
I've frozen spring rolls that way. I make them just like I normally do, then freeze them. When I want some, I bake what I need in the oven. That works just fine and if you put them on a rack it bakes off some of the oil from frying as well. I've done that with fried chicken too.
I fried my own green tomatoes last night!! (Thanks to my Dad who supplied me with them!) And they were soooooooooo good!! Yes, Pat, I thought about you while I was fixing them. lol. I made batter out of 1/2 cup corn meal, 1 1/2 cups of flour, s&p, and enough milk to make a thick batter. I'm raiding Dad's garden again soon.... :)
