Dinner


I didn't feel much like blogging today, sorry, it was just one of those rare days I felt quiet. I spent the day in the garden and yard and I cooked. I know, cooking is not my thing, but, today I found it pleasant. For dinner I made spicy black bean and rice with steamed rosemary chicken. It's one of my favorite meals. And I had sliced yellow tomatos. I used that Vigo spiced bean and rice mix and doctored it up. It makes quite a bit. Then I added micro steamed chicken that I'd packed with Rosemary and Garlic. I love my microwave steamer, it makes the best friggin' chicken. Anyway, it was sort of cooking, for me, I'm not a great cook..you know what I AM good at?

Pies. I make damn fine pies. I used to think everyone could make pie, but, then I started eating other people's pies and found out they can't. This one is cherry/rhubarb. Kind of pretty for a quicky, huu? I was going to do the traditional lattice crust and then decided this was easier and it would do for me. It's not like it's entering a pie beauty contest.

I collect old restaurant stoneware bowls. They're weighty and feel comforting. And the old glass or stoneware pie dishes, with flower patterns.

Still full from dinner.... Leftovers from yesterdays dinner (lol)...the hubs is gone and I didn't feel like cooking... and slow cooker apricot chicken and rice - sooo good and sooo easy. 1 packet of onion soup mix, mixed with equal parts (1cup each) apricot jam & catalina/california french dressing. Poor it over chicken (I only used breasts, but whatever you like) in slow cooker and set for your desired time. I serve it over white rice. It's kind of got an asian-y flavor to it....

One of those things that's even better the next day!!

Pie looks delish btw, even though I don't like rhubarb. I made (and we ate) 2 apple pies in the last week, we were just in the mood for it. I make it with a crunchy crumb top and put pecans on my half bc the hubs hates nuts with his desserts..lol .. going to go get another piece right now

Had a late luch of egg salad sandwich and malt and vinegar potatoe chips and half a cantalope and am still full.Went to farmers market yesterday and picked up some purdy peaches (Colorado is pretty famous for peaches) and am holding back three to mix with raspberries and blueberries for a pies tomorrow. I'm a pretty good pie maker too and don't measure anything. Do it by feel. Pat, you are a cook. Give yourself more credit :)

Almost forgot-I collect Fiestaware. I have been collecting for years and have enough to outfit the Duggars 3x over. The only color I don't have piece of is lavendar. They brought it out and discontinued it so fast I missed the boat. Now the cheapest piece in that color is $100.

I love making apple pies even though I do not do it often. I would love to try a cream pie.

DD, how do you keep the crust from folding back toward the pie plate before it bakes? The curve of the crust looks great.

Boneless chicken breast marinated in Italian dressing for 24 hours cooked on my little George Foreman grill for 5 minutes - with a bowl of bagged, mixed green salad and Balsamic and olive oil vinigrette.

Oh, I LOVE pie!! That looks so good. I had a chicken salsa flatbread from wawa and a milkshake for dinner. Then just now I went out with a few friends and had some garlic knots. :)

As for collecting kitchenware, I don't personally - but we are huge tupperware fans here. As for our dinnerware I LOVE my grandma's plate and silverware from her wedding. It was in the 60's and everything is really lightweight. I feel weird using anything else - things now are SOOO heavy. I know that's usually a plus for most people, but I never claimed to be normal, LOL

Biz - how long do you do the breasts? I haven't had much luck with them in the slowcooker but I think I overcook them.

That pie looks absolutely delicious. And the beans and rice sound yummy, love them. I was home alone so I just had a chicken sandwich and some fries.

I collect any blue deldt and have decorated my kitchen with it. I also have a collection of cookie cutters but I think my daughter has claimed them now. Great thread!

The pie looks great, and you're right, not everyone can make a pie. The filling is easy, it's the crust that makes all the difference. Haven't cooked all summer, tonight, yogurt and granola, red licorice, and a cinnamon bun with nuts and raisins(store bought). I'm best at Italian. Not a recipe person.

I had Arby's pecan chicken salad sandwich for dinner. It was dance practice night, so I had no time to make anything :( I can tell you what I had yesterday: an ecuadorian tuna fish soup. Otherwise known as the hangover helper lol, it's yellowfin tuna cooked in a broth that has a sauteed vegetable base, and yuca root chunks, topped with a fresh red onion-tomato-lime salsa and a splash of olive oil. Eat with fresh avocado and white bread. I had the leftovers for lunch today, and I shared it with my SIL who's visiting from Denmark. She loved it!

I don't collect kitchenware. I don't have enough room to store shit. :(

Just bananas. I would have liked a huge salad, but I was working outside till past dark. I'm car camping at a place that has no water yet! (building a cabin)

Right now I'm at the town Starbucks using their wireless, but I don't feel like anything but a green salad and I only like my own and ones from 2 restaurants back in the city.

Love your pie. Glad you said it, pies aren't the easiest - they're too runny or too thick, bland, etc and the crusts can taste like lard - ugh, or have little hard bits all through like my mother's.

I've started using hot water pastry which isn't everyone's taste - but if you can't make good regular pie crust (me) it's better than bought.

I collect vintage stuff, nothing particular. I love linens especially real linen towels or tablecloths. For some reason, anything I buy really cheap feels far more valuable to me than stuff I spend lots more on. I also love second hand wool blankets and use them all the time. Well, I'm Canadian.

I had a baked potato and two vegetable burgers with imported aged Irish cheddar cheese on them. I never eat dessertes - ever. But, usually about once or twice a year, I get in the mood to make a pie. I make apple or pear pie with raisins and walnuts. I get the ready made crusts in the red box from Pillsbury. They are not bad at all. I just can't handle making crust. I used to cook five or six course gourmet meals with wines when I used to entertain. But, I have not done this for about five years now. I was really a great cook - it's funny how things are such a part of you and then your life changes and your interests shift.

I made a pie once, it took me an entire day and I'm not joking. I never tried it again. I'd rather mend socks all day. Your pie looks very pretty.

We went out for pizza, and then we came home and snacked on peas from my teeny garden. I think it's going to freeze here before my golf-ball sized tomatoes are ready to eat.

Had Mexican takeout--I was tired from a busy week at work following
my vacay week last week. Didn't feel like sitting in a large, loud crowed room to eat. I collect old
cookie cutters. A couple of years ago one of my niece's eyed them so I gave her all my collection (that I had started when I was 10-11. She got all the ones from my Grandma) I started the collection over about a year ago. Ebay alot for these.
Pat, your pie looks yummy. I don't bake pies-wish I could. My Mom could make the best crust. I just buy the frozen pies for Holidays. Fun thread.

Love black beans. Often I'll eat them alone and maybe mixed with a salad. That pie is to die for! So pretty and looks so good!

Last night I had home-made carrot soup. It's one of my favorites. I usually only use carrots, onions and celery but decided to throw in some cut up chicken breast this time around. Very tasty and low calorie.

I have lots of different kinds of collections: old tins, antique glassware, kitchen utensils from the 40's and 50's. I love old stuff. I have a hoosier cabinet in my kitchen loaded down with antique bowls, utensils, and glassware. It's one of my favorite spots in the house.

Tonight for dinner will be quesadillas (chicken and vegan) and I am going to bake a chocolate cake today.

I had chicken breast with sweet/sour glaze baked potato and salad. Oh and mud pie mmm so good..
My hub had rare beef and fries. I swear I married a vampire. The bloody the food the more he likes it.

I have read your blog for a long time in fact it is the first thing I go to in the morning before work. I think you are a kindred spirit. You are an incredible person, and I thank you for your thoughts they are inspired, and insightful. I love to make pies,(make sure the water is ice cold) and collect fiestaware,and frankhoma pottery. My grandmother bought a set in the 60's in Oklahoma.I remember walking among the rows of dishes all laid out on low tables, and helping her find individual pieces to make a set. Last summer I made a stop there and bought some additional pieces.She collected the wagon wheel design in green. It was the 60's! I like the western designs too! It is still there! They also sell diner ware. www.frankoma.com My grandmother decided it was too heavy for everyday dishes and bought Pfzafgraff (Remembrance pattern) when it was so popular.It is beige and has small pale blue flowers around the rim. I remember hating it because it was so boring to look at when I washed the dishes. As I put away the Pfaltzgraff I could see the rich green color wagon wheels dishes banished to the top shelf of the kitchen cabinet. I looked at the Pfaltzgraff website today and was surprised to see vivid colors.

Anon 12:31... I lucked out with my Hoosier. Had been looking for a long time but didn't like the high price tag. Finally ran across one at an affordable price and snatched it up. I'm lucky that I had a perfect spot for it in my oversized country kitchen. I'll send a pic to Pat so she can post it for you to see.

Your pie looks delightful :) Pie making is a talent, and one that I am trying to master. I make a decent black cherry pie, but I really am not the best at the crusts :( I do great cookies though, does that count?

Last night we had ham, scalloped taters and fresh strong beans. Tonight is roasted chicken, homemade stuffing and green beans again....we have so many from the garden and I love em!

I collect antique and vintage advertising - paper, tin or wood. Crate tops or sides, tin signs and magazine or poster advertising.

Fortunately for my pocket book, it's hard to find so the fun is in the "hunting". I don't like to buy on eBay; I think it's more fun to go to "junk shops", flea markets, and garage sales and I'm delighted when I hit pay dirt!

Fun to see the interests of others. Old bottles used to be easy to find for very little cost--the internet changed that. I have a bottle that I paid 75 cents for that I've seen for sale on the internet for hundreds of dollars. Two much for me, but I'll pass what I have on to the younger generation. They can cash in!!!

I had glass noodle soup with silken tofu bean curd. Then P made deep fried rice balls & I ate 3 of them & now fell ill. Oh I did manage to get down a kit kat chunky peanut bar so feel really sick. lol

I collect all kinds of kitchen things. I particularly love old glasses with quirky things on them.

Your dinner looks great! I love, love, love beans and rice. I'm definitely more of a baker than a cook. I can follow a recipe but that's about it. I mostly just watch Top Chef and pray for inspiration.

I collect cookbooks too..I get a kick out of the tips for proper entertaining of guests. I have my granny's old Mary Margret McBride cookbook from the 50's..still have some recipes she wrote out.

I roasted a chicken and deboned it to make Pita sandwiches with pickled peppers and some onions. I make a small hole on top of the tomato and put hot pepper, cilantro, few chopped onions, salt and cover it with Aluminum Foil after it cooks for a bit on direct flame. When it comes out I chop-it to a salsa consistency to pour in the sandwich.

Fried bread works great because it soaks up the juice, so it's a cleaner bite that won't spill as much as pita bread.

I also bake once in-a-while, but my pies don't look as good as yours did Pat, I'll have to go to remedial baking classes next.

Hey, I just noticed your moon phase clock!. That's great, I always keep an eye on it to select best fishing times. Even minor moon activity has big effects on minor feeding periods during the day. Fish will bite more aggressively almost to the minute in concert with moon phases. And when you bring kids fishing there better be some catching.

Redfish on the grill with some cajun blackened seasoning!, maybe shrimp stuffed flounder?. Those are my favorite seafood dishes from down here in the Texas Gulf coast.

I love baking and there pretty much isn't anything I haven't tried. I don't have time for it so much lately and since I'm the one who ends up eating it, it's better for me if I don't make anything.

Supper was fruit salad. Blueberries, strawberries, pineapple, Gala apples although something tart would have been better, and peaches. I sprinkle just a bit of sugar over it and squeeze two lemons over it and voila. When I dish it up I slice half a banana into it. I don't put those in with the rest cuz they get soggy. I love making it and I love eating it.

You didn't ask but breakfast this morning was a 12 grain bagel with peanut butter and coffee. The best.

I don't collect much except rocks and fossils but I do have several antique Ansley cups & saucers. I have no where to put them and they're packed away in boxes. Due to space issues, all I'm collecting lately is dust.

Speaking of pie, I am so looking forward to going to Wisconsin apple picking and picking up some of Elegant Farmers apple pie baked in a paper bag. It is the best damn apple pie I have ever tasted. I so want to try and make one. The top crust is different from the bottom and very crunchy and sweet. If you ever get a chance to try one I highly recommend it. With my luck I'll probably set the damn bag on fire and burn down the house. This will be my fist year trying Ida Red apples for a pie.

Aren't those Elegant Farmers apple pie in a bag delicious?! I have a recipe for apple pie in a bag and I have never burned my burned down my house. It is the only apple pie recipe I use. Have fun apple picking!

I think the secret to the cream puffs is the recipe. I have a REALLY old Betty Crocker cook book. No cover, so I can't replace it and there are NO shortcuts in this cookbook. It's from a time where if you wanted biscuits you used flour, shortening, milk, etc. I think it's from the 1920's. The dough is really simple...flour, water, butter and the filling took a long time to make but was custardy and yummy. Want me to post the recipe?

I have so many old diner plates & bowls that when we eat it's like we are at MCL cafeteria! Its all we use. I have china, but who really uses the china? We use the old green rimmed plates & the oval plates are the best for biscuits & gravy! Small, big, medium. I have them. Somehow. along the line I just started bringing them home & now my cabinets are full of old diner dishes too. I always want more. We seem to have alot in common Pat.

Chitown Peg: Do you know if you stand on a Lenox dinner plate even with heels, it wont break? I used to work in a store that sold china, crystal etc. We would register brides too. Once the Lenox rep came for a store meeting and demostrated this. He stood on a dinner plate, it was on carpet. It didnt break. So, the next time I had the chance to show my new skill, I did and it didnt break! I was wearing heels too! Amazed the customer and they gasped at me doing this! LOL...what a hoot! Anybody that will pay $80+ for a damn dinner plate deserves to have the sh** scared outta them! hahaha

Here's the cream puff recipe...

1 C water
1/2 C butter or margarine
1 C all-purpose flour
4 eggs

Heat oven to 400. Heat water and butter to rolling boil. Stir in flour. Stir vigorously over low heat about 1 minute or until mixture forms a ball. Remove from heat. Beat in eggs all at once. Continue beating until smooth. Drop by scant 1/4 cupful, 3 inches apart on ungreased cookie sheet. Bake 35 - 40 minutes or until puffed and golden. Cool away from draft. Cut off tops and pull out any filaments of soft dough. Fill. Replace tops. Dust with 10X. Refrigerate until serving time.

Filling:

1/3 C sugar
2 TBSP cornstarch
1/2 tsp salt
2 C milk
2 egg yolks, slightly beaten
2 TBSP butter or margarine
2 tsp vanilla

Blend sugar, cornstarch and salt in a 2 quart saucepan. Combine milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Cool slightly.
