Heidi shares her pickle recipe

Crisp Pickle Slices
6 lb. medium cucumbers6 medium white onions3 cloves garlic, peeled1 green pepper1 red sweet pepper1/3 cup canning salt3 cups sugar1 1/2 tsp. turmeric1 1/2 tsp. celery seed3 cups white vinegar2 tablespoons mustard seed
Wash and thinly slice unpeeled cucumbers. Measure out 4 quarts. Slice onions and chop garlic cloves. Slice peppers in strips, discarding interiors. Mix these ingredients together with the salt in a large pan. Cover with ice cubes and mix together. Allow to sit for 3 hours in a cool place. Drain completely and set aside. Add remaining ingredients to pot and bring to a rolling boil. Pack your hot, sterilized jars with cold veggies and the hot liquid. Give 1/2 inch clearance at top, wipe rims clean and adjust lids. Process in a boiling water bath for 10 minutes. I let them sit for at least a month before I open.
If you do not want to can, you can do these as refrigerator pickles. Do the same steps but do not can. Just put them in the fridge to marinate. They should be ready in about a week to eat.

Thanks, Heidi. I have tons of cucumber vines, but, no cukes yet. I love pickles.

Nancy..

You can put less sugar in if you do not want a true bread and butter pickle. That is what these are. I personally do not like them but Chelsea and my hubs LOVE them.

My Grandma used to make these for us kids every summer and we loved them. I lost her recipe years ago so this is great. Thanks or sharing Heidi!

Gawd, I LOVE pickles! That picture makes my mouth water. Heidi you are amazing! Once I canned tomatoes...one night I heard something pop, then another & another...I quickly figured out that my tomatoes had went bad & the jars had exploded! What a MESS!! :(
After that I gave up canning. I cannot do it.

I love the picture. That takes me back to my youth. My mom canned, parboiled and preserved everything.
The only kind of pickles I remember her making were bread and butter, sweet, and dill, though I think there were more.
The recipe looks good. I may have to try this, this year. Thanks.

Thats why I love the farmers market. I love home made pickles and dilly beans mmmm.. Home made food is so much better than over processed junk.
